Doesn't that just look stunning? Does it make you hungry, because it certainly does for me. Cooking a steak can be a little bit daunting with all different options and price points. This one look especially intimidating, but cooking it is not that hard. It is called a picanha. Picanha is a cut of beef called sirloin cap in the United States that is popular in Brazil. Oh I'm sorry, I forgot to introduce myself! My name is Noah, one of the Sheldons, and today I will be will be showing you to make Picanha!
The first ingredient we will need is Brazilian Crystal Salt, and garlic powder (for our seasoning). I'm not going to give any amounts or anything, because in cooking, you can put a ton of seasoning, or a little to no seasoning, it's all to your preference in this recipe. Rub your seasoning on both sides of the steak and get your cast iron pan and 1/4 cup of butter and melt it on the cast iron pan as you prepare to sear your steak.
When the butter is starting to pop (if you don't know what it means, you'll know when you hear it), that's when it's time to place your meat onto the pan. We recommend you to cook this steak at medium rare, so you can have it nice and tender in the middle. Because you are searing this picanha you only flip the steak once so you don't break the sear. And when it's time, carefully take your picanha from out of the pan and place it on a cutting board. Remember to cut the steak against the grain, so it doesn't lose all of its juices. When you have finished cutting your picanha, it should be a perfect pink in the middle.
Now that you've have all of the picanha cut and ready, it's time to serve it!
